 GARLIC, COOKING 1 MINUTE. REDUCE HEAT, ADDING CELERY +
 CARROT, COOKING 2 MINUTES. ADD GROUND BEEF, SALT, PEPPER +
 COOK UNTIL BEEF IS DONE BUT NOT BROWNED. ADD WINE + TURN 
 UP THE HEAT TO MED / HIGH TO EVAPORATE WINE (YOU COULD USE
 CHICKEN STOCK INSTEAD OF THE WINE). REDUCE HEAT TO MEDIUM 
 ADDING THE MILK, NUTMEG. CONTINUE STIRRING UNTIL MILK HAS
 EVAPORATED. ADD THE ROMA TOMATOES STIRRING WELL, TURN HEAT
 TO LOW, SIMMER FOR 2 – 3 HOURS UNTIL SAUCE HAS THICKENED. 
 RE SEASON IF NEEDED. PREPARE PASTA AS DIRECTED, STRAIN,
 PLATE, POUR SAUCE OVER TOP SPRINKLING PARMESAN CHEESE +
 PARSLEY (IF DESIRED) OVER TOP. SERVE IMMEDIATELY WITH

 SUGAR + PROCESS MIXTURE UNTIL IT'S A SMOOTH + GRAINY PUREE.
 ADD THE VINEGAR + COMBINE. WITH THE MOTOR RUNNING ADD THE
 OLIVE OIL IN A SLOW STEADY STREAM. THE FINISHED PESTO 
 SHOULD BE LIKE A GRAINY MAYONNAISE. TRANSFER TO A JAR WITH 
 A TIGHT FITTING LID. CAP LID TIGHTLY + CHILL OVERNIGHT. IT
 WILL LAST A WEEK IN THE FRIDGE. SERVE @ ROOM TEMPERATURE.

   BLEND ROOM TEMPERATURE CHEESE + SOUR CREAM TOGETHER.   
 SPREAD A THIN LAYER ON THE BOTTOM OF A 9” X 13” DISH. 
 BROWN BEEF, ADD TACO MIX + WATER, DRAINING ANY EXTRA  
 LIQUID + SPREAD ON TOP OF CHEESE MIXTURE. THEN TOP WITH
 SALSA, LETTUCE, CHOPPED TOMATOES, GREEN ONION + GRATED  
 CHEESE. YOU CAN ADD PEPPERS, BLACK OLIVES OR CHANGE 
 CHEESE TO MOZZARELLA OR FETA. YOU CAN ALSO CHANGE THE 
 MEAT TO THINLY SLICED COOKED CHICKEN OR PORK. SERVE HOT 
 OR COLD WITH TACO CHIPS.  SERVES 4 - 6
